Emily's Strawberry Pie
Crust: (or buy a quality frozen one...this pie is so good, it won't matter!)
1 stick of butter

4 TBSP powder sugar
1 c flour
Melt butter and mix with sugar and flour. Press in pie plate. Pierce with fork a few times. Cook at 400 til brown.
Filling:
1 c sugar
4 TBSP corn starch
pinch of salt
1 c water
Strawberry Jell-O (small package)
3 cups sliced strawberries (cups,
not pounds. I've done pounds before. Whoa.) Dissolve corn starch in water. Cook first four ingredients until clear and thickened. Stir in Strawberry Jello. Add sliced strawberries. Put in refrigerator til solid and cool (this takes a while, so don't rush it!) Oh, and top with whipped cream/cool whip!
Very refreshing on a hot day. If you try it, let me know what you think. And thanks to my pal Emily for giving me this recipe years ago.
